Homemade Buttermilk Biscuits without the Buttermilk

Yes, you can make buttermilk biscuits without buttermilk.  I never buy buttermilk because I never use it all and I don't hate to throw food away.  It is so easy to make your own buttermilk.  For one cup of buttermilk just use 1tbsp of lemon juice (or apple cider vinegar) and add enough milk to make 1 cup.  Let it sit for 5 minutes, and you have buttermilk.

Here is how to make these easy, easy buttermilk biscuits:

2 1/2 c Flour plus some to roll out dough
3 tsp Baking Powder
1 tsp Salt
1/2 tsp Baking Soda
1/3 c melted butter (or margarine) plus 1 tbsp
1 c of Buttermilk (1tbsp lemon juice then enough milk to make 1 cup)

Preheat oven to 450 degrees.
Combine the dry ingredients.
Add the melted butter and buttermilk a little bit at a time while mixing.
Stir until it is a sticky dough and everything is mixed.
Knead dough a few times on a floured surface until it is a soft ball.
Don't over work the dough.
Roll out or pat out to a 1/2 inch thickness.
Use a biscuit cutter or small cup to cut out dough.

Place a cookie sheet.  I use parchment paper on the cookie sheet but you don't have to.

Bake at 450 degrees for 10-12 minutes.

Coat the top of the biscuits with a little bit of melted butter when they come out of the oven.

I actually made a double batch to make sausage biscuits to freeze.  This way my hubby can grab one in the morning and warm it up.  Hopefully, this will keep him from stopping at McDonald's.

  2. Came here after seeing the sausage biscuit recipe. Yum yum! I'm so glad to see a buttermilk substitute. I normally just skip any recipe that calls for it, because I don't want to buy it. I'm definitely going to have to try these for the sausage biscuits. And I hope it will stop my fiance from going to McDonald's too!

  3. Super easy! I just had to make do with what I had because I didn't have buttermilk. So, I appreciate you posting a substitute! Throw a little bit of jam on them and they're a pretty tasty snack :)
