Breakfast Burritos

Yesterday, I decided to make some breakfast burritos.  I'm tired of the hubby stopping to get a fast food breakfast.  I hate getting up early (and my fibro is not good in the mornings).  So, I decided to cook a bunch of breakfast burritos and freeze them.  All he (or my daughter) has to do is warm it up in the morning.

By doing them myself, it will save us loads of money and I know what he is eating.  He has diabetes and needs to work on his diet.

I only made 15 this time, but I think I will do even more the next time and will add some more ingredients next time.  I made half of them sausage and egg, the others were sausage, egg, and cheese.

My cost was about $5 for 15 breakfast burritos or about $.33 a piece.  A pretty good deal if you ask me.

Breakfast Burritos
1 lb breakfast sausage ($1 on sale, w/ coupon)
12 eggs (around $1.80)
1 c shredded cheese (about $1 - bought a huge bag)
little bit of milk for scrambled eggs (maybe $.25 worth)
15 tortillas (maybe $1 - bought a large bag, check Hispanic markets - they are cheaper there)


Cut up the sausage into patties, and cook in a skillet.
Put on paper towels, and pat with paper towels to get rid of excess grease.
Whisk the eggs together with a little bit of milk.  (I didn't measure probably between 1/4-1/2 c of milk.)
Use the same skillet after getting rid of most of the grease to cook your eggs.  You still want some of the sausage bits that are left in the skillet.


Cook your scrambled eggs, breaking it up into small pieces while cooking.
Cut or break your sausage into small pieces.



After everything is cooked, line up everything into an assembly line of tortillas, eggs, sausage, and cheese.
Put a little bit of egg, sausage, and cheese on each tortilla (or half of them, like I did).
Roll burritos by folding sides in a little bit, fold over bottom, then roll towards the top of the burrito.


Place on plate with the smooth side of the burrito on top, and the end of the tortilla on the bottom.  This way it won't unroll on you.
Spray a skillet with non stick spray, or add a little bit of olive oil to a skillet.
Place burritos in hot skillet to grill both sides until they are lightly brown.


After the burritos have cooled, wrap each burrito in a little bit of wax paper or parchment paper (optional), and place in a freezer bag.
Make sure you label the bag with what type of burritos they are and the date.

Have fun and make them anyway your family likes them.  Change up the meat, maybe add some onions, or potatoes either shredded like hash browns or small cubes.  Check out the ingredients some of your favorite fast food places use.  By doing them yourself, you can really cut down on the grease and make them healthier, while saving money.

    1. My daughter put 2 in the microwave this morning for 2 1/2 minutes. I would start with a minute or so. It will depend on your microwave.
