Make Some Delicious Cinnamon Rolls

You are going to absolutely love these cinnamon rolls.  They are delicious if I say so myself.  Depending on how much you roll out your dough, you should be able to get between 20-24 cinnamon rolls with this recipe.  I know that sounds like a lot but you can do what I do, and freeze the rolls individually.  Then in the morning all you have to do is stick them in the microwave for 30 seconds to a minute (depends on your microwave).  They will be warm and taste like they just came out of the oven.

Cinnamon Rolls
Ingredients:
For Rolls
  • 1 pkg active dry yeast
  • 1 c warm milk
  • 1/2 c sugar
  • 1/3 c butter, melted
  • 1 tsp salt
  • 2 eggs
  • 4 c flour
Filling
  • 1 1/2 c packed brown sugar
  • 3 1/2 tbsp cinnamon
  • 1/3 c butter, melted
Icing
  • 8 tbsp butter, softened
  • 1 1/2 c powdered sugar
  • 1/4 c (2 oz) cream cheese
  • 1/2 tsp vanilla
  • 1/8 tsp salt
Dissolve the yeast in the warm milk in a large bowl (or Kitchen Aid bowl).
Mix in the sugar, butter, salt, and eggs.
Add flour, and mix well.
Knead the dough into a large ball.
Put the dough in a lightly greased bowl, and cover.
Let rise in a warm place for about 1 hour, or until the dough  has doubled in size.
Roll the dough out on a lightly floured surface, roll dough flat to about a 1/4 inch in thickness.  Try to get it in an rectangular shape.

For the filling, combine brown sugar and cinnamon.
Spread the melted butter on the dough.
Then sprinkle the cinnamon/sugar mixture on top of the butter as evenly as you can.

Roll the dough from the bottom to the top (or the top to bottom) carefully.
Cut the rolled dough into slices about 1 1/2 inches thick.
Place rolls evenly spaced in a lightly greased pan.  (I used a 9 x 13 pan, and 8 x 8 pan.)
Let the rolls rise again until double in size.
Preheat the oven to 400 degrees.
Bake for about 10 minutes, or until light brown on top.
Combine the icing ingredients.  Beat until fluffy.  (Sorry, the picture did come out.)
When rolls come out of the oven, coat each generously with icing.

I wrapped each roll individually in wax paper after they cooled.  Then put them in a freezer bag, and put in the freezer.
